Sliced Raw Beets over Sautéed Swiss Chard

Beets are so delicious and healthy. And they can be great raw in a nice dressing over sautéed greens and slivered almonds.

- Four large or five small to medium beets, peeled and thinly sliced or use a mandolin.

- 1 large bunch of Swiss chard, chopped and stems chopped into one inch pieces

- 3 cloves of garlic, minced

- 1/3 cup of slivered almonds

Dressing --

2 TBSP olive oil

1 tsp Dijon mustard

1 tsp vinegar

1/2 a shallot chopped fine

juice from 1/2 a lime

Heat 2 TBSP of olive oil in a sautée pan. add the chopped stems and cook for about two minutes. Add the garlic and Swiss chard. Cook until tender about five minutes.

Next take the sliced beets and mix with the dressing. Place on top of Swiss chard, add slivered almonds and serve.
