
This is a Mediterranean-based salad that can be thrown together in 5 minutes.
Key ingredients to have in the house to cheat your way into a salad tasting super fresh are: cherry tomatoes, fresh cucumbers, fresh parsley, and a red onion. We always have these in our refrigerator.
Everything else, as in this salad, can be from frozen or canned. Here we used quinoa (which we prefroze) and canned chickpeas.
Toss with a little bit of olive, and salt and pepper to taste.
We could eat this alone for lunch or dinner, while a true carnivore might consider this dish a side accompaniment with a protein of choice.
