
Here's the best Teriyaki recipe versatile enough to be poured over tofu, chicken/beef, shrimp, and vegetables.
Prep time: 1 hour in advance
Actual cooking time: 15 minutes
Preheat oven to 350. Make rice according to package or in a rice cooker.
Prepare marinade sauce: (serves 4):
4 TSBP soy sauce or Tamari (gluten-free)
3 TSBP rice wine vinegar
2 tsp sesame oil
1/4 cup orange or pineapple juice
2 TSBP agave
1 TSBP grated ginger
3 cloves of garlic, grated
2 chopped scallions for garnish (white parts to bake over tofu and shrimp, green for garnish)
Cooking method:
Over tofu: Drain one box extra-firm tofu by pouring out the water, and wrapping the tofu block in paper towels. Leave a heavy can or pan on top of the block for 30 minutes to press out the water.
Slice tofu into 1 inch rectangular slices. Use 1/3-1/2 of marinade on tofu and allow to marinate in refrigerator for at least 30 minutes (or overnight) in a rectangular casserole bowl that you can bake in. Bake the tofu for 30 minutes or until golden and slightly crisp, turning halfway through and adding chopped scallions.
Over chicken/beef strips: Pour 1/3-1/2 teriyaki sauce over chicken and allow to marinate for at least 30 minutes before cooking.
Over shrimp, deveined and peeled: pour 1/3-1/2 teriyaki sauce over shrimp and allow to marinate for at least 30 minutes before cooking. Bake for 15 minutes (the shrimp only need about 15 minutes so pop them in the oven when you turn the tofu).
Over vegetables -- broccoli, string beans, zucchini, squash: pour 1/3-1/2 teriyaki sauce over vegetables. Stir to coat. Lay vegetables in a sheet pan and bake in oven for 15 minutes (for broccoli and string beans), and 20 minutes (for zucchini and squash).
Serve with rice, prepared according to package.
Add any remaining marinade to rice. Combine. Scoop rice onto plates, top with baked tofu, or shrimp, vegetable of your choice, and sprinkle remaining chopped scallions. Add salt and pepper to taste.
