Cabbage Salad with Blood Oranges

The dressing and blood orange segments help make this simple salad stand out. A handful of chopped pistachios lend the perfect crunch. Vegan and gluten-free.

- one small Savoy cabbage, shredded

- two carrots shredded

- two small blood oranges (peeled into segments)

- I cup of baby spinach

- 1/4 cup pistachios (chopped)

- 1/4 cup chopped parsley

- 3 scallions, chopped

For the dressing

- juice from one small lime

- 1 tsp lime zest

- 1 tsp orange zest

- 1 tsp honey

- 1 tsp dijon mustard

- 1 TBSP balsamic vinegar

- 1 small clove of garlic chopped very fine

- 1/4 cup olive oil

- salt & pepper to taste

Mix all of the salad ingredients, reserving the pistachios until ready to serve. Combine and whisk or shake all of the ingredients for dressing in a jar. Add to salad and toss well. this salad should easily serve 6. If you would like leftovers, set some aside undressed.
