
Grilled beets, hallumi cheese, and arugula together make this incredibly simple and refreshing salad. Throw these three things together whenever you're bogged down with work; you can make big portions and it's guaranteed to be delicious.
Ingredients for the salad:
3 baby beets, ends removed, peeled
1 TBSP olive oil
salt and pepper, to taste
arugula salad mix (or salad greens of your choice!)
4 slices of halloumi cheese, about 1/4 inch thick
1/4 cup of pistachios (optional)
Ingredients for the dressing:
1 TBSP balsamic vinegar
3 tablespoons olive oil
1 teaspoon maple syrup
Cut the beets into bite-sized pieces and preheat the oven to 400. Toss the beets in olive oil with salt and pepper and spread them out on a baking sheet. Roast the beets for 30-35 minutes, or until they're crisp on the outside and tender on the inside.
While the beets bake, whisk together the dressing ingredients in a small bowl and set it aside. Get out a frying pan and grill the halloumi on medium heat for 2-4 minutes per side (no oil is necessary).
Toss the arugula, beats, and halloumi together. Top the salad with the dressing and pistachios. Enjoy!
