Puff pastry dough (Trader Joe’s has a good one; Dufour is more expensive but very good and easy to find)
Two large onions or 3 small
1/4 cup of grated parmesan or pecorino cheese
1 cup of half and half
2 eggs
one dozen halved cherry tomatoes
1 TBSP butter
1 TBSB olive oil
Salt & pepper to taste

Either brand works well. The Trader Joe's gives you a little more and about 1/3 of the price.
You can use a regular 9 inch pie pan or here I used small tart pans with removable bottoms and got 10 little tarts. Preheat oven to 400. Begin to roll out the dough (defrosting based on package directions). Press the dough into the pie pan or use a glass to make circles to line the small tart pans. Slice and chop the onions fine. Add a TBSP of butter and a TBSP of olive oil and cook the onions until they are light brown, about ten minutes. Mold the dough around the pie shell and sprinkle the parmesan cheese on top. Now top with the cooked onions. In a medium bowl, whisk the eggs with the half and half. When combined, pour into the pie shell. Add the cherry tomatoes and a dash of salt and pepper. Bake at 375 for about 45 minutes or until the eggs are set and the crust is golden.
