Cauliflower "Fried Rice"

If you can't have the real thing, this is as good as it gets. Cauliflower Fried Rice feels like you are eating rice but getting so much more fiber and vitamins without the carbs

- 1 medium head of cauliflower (pulsed)

- 1/2 cup of frozen pea (or substitute edamame)

- 1/2 red bell pepper chopped

- 2 large eggs beaten

- 3 scallions

- 2 cloves of garlic chopped

- 1 TBSP soy sauce

- salt & pepper to taste

- 2 TBSP grapeseed or vegetable oil

Place 2 TBSP olive in large skillet. Once hot, add garlic, cook for one minute until garlic is golden then add eggs. Move eggs around, and once no longer runny, add pulsed cauliflower. Add salt and pepper and peas and pepper. Cook until vegetable are softened. Add scallions. Add soy sauce. Cook for one more minute. Serve in a large bowl.
