Blueberry Almond Bites 📹

With no sugar, these baked treats really satisfy a sweet tooth, but you won't come down crashing. In fact you'll increase your energy and be able to last until dinner with this as a mid-afternoon snack or even breakfast.

Ingredients

  • 1 - 1/2 cups oats

  • 1 cup almond flour

  • 2 large eggs

  • 2 medium bananas

  • 1/4 cup almond butter

  • 1 tsp vanilla extract

  • 1/4 tsp of salt

  • 1 cup blueberries

  • 1/2 cup shredded coconut

Directions

In a food processor, combine the oats and almond flour. Mix until well combined. Next add the eggs, bananas, almond butter, vanilla extract, salt, and mix again till well combined.

Remove blade and bowl from food processor and fold in the blueberries and shredded coconut. Place as rounded teaspoons on a baking sheet.

Bake at 350 degrees for 10-15 minutes. You should get around 20 bites. Double the recipe and freeze half if you would like leftovers.
