
We all have eggs in our Fridge. And probably some leftover veggies. I also alway have a can of black beans, an avocado and frozen corn. And always tortilla wraps for when we are really low on snacks so my kids can grab cheese and make a quesadilla. Unless you are vegan, these egg recipes will satisfy. And in most cases, you can leave out the egg -- if using beans that will satisfy protein, and you can add in some sunflower or pumpkin seeds and always add in scallions when you can. One serving of scallions (like one scallion) has about half of your vitamin A and C, tons of folate, iron and almost double the daily allowance of K, which has shown to help the brain and promote bone health.
Take spiraled zucchini and top with avocado, olives, tomatoes, and some spicy mayo. for the kids add some multigrain bread and cheese (or vegan cheese).

With or without beans, use veggies in your fridge, esp ones that don't have to be cooked when you're really in a pinch. Avocado, red onion, herbs, tomatoes and salsa or hot sauce over a tortilla and a fried egg can really save the day. Cheese is optional.

A quick breakfast burrito is great anytime of day. To make it fancier than scrambled eggs with cheese and scallions, wrap your eggs in a burrito, add toppings like parsley and put out sides like sour cream, smashed avocado and tomatoes. Mushrooms on the side here too.

And over salad. For the carnivore, serve with a rotisserie chicken.
