Grain & Sugar-Free Chocolate Chip Cookies

No they are not quite like the real thing. But they do satisfy the sweet tooth and are dairy and gluten-free, and much lighter without the wheat flour. Sweetened with Stevia which is not artificial as it comes from the monk fruit plant, they are okay for anyone that can't eat sugar. They are also lighter since they are made with almond flour. This recipe makes about a dozen.

  • 1/4 cup coconut flour

  • 1/4 cup almond flour

  • 1/2 tsp salt

  • 1/4 tsp baking soda

  • ½ tsp cinnamon

  • 1 tsp vanilla extract

  • 1/4 tsp powdered Stevia (a little more if you prefer sweeter)

  • 3 eggs (use flax egg for vegan)

  • 1/3 cup coconut oil or grass fed butter, melted

  • 1/2 cup chocolate chips (sweetened with Stevia)

Preheat oven to 350. Combine both flours, baking soda, salt, cinnamon, and Stevia in a medium bowl. Mix to incorporate. Next add wet ingredients and combine to form a dough. Fold in the chocolate chips.

Form dough into medium-size balls and place on cookie sheet, slightly flattening as you place them.

Bake for 12-16 minutes, or until bottom of cookie is golden brown. Cool for 10 minutes before eating or storing.
