
Being Paleo, on a SIBO diet, or having IBS may mean the need to cut sugar and grains. This is a perfect recipe for when you need just a little something sweet without cheating. When you are on a grain-free, or gluten-free diet with no sugar or honey or maple syrup (SIBO/IBS*) you are allowed a tiny bit of Stevia which comes from the monk fruit plant. Thankfully, there is one company that also uses it to sweeten dark chocolate (Lily's) which really helps. This recipe is not like a typical flour muffin, but lighter and still yummy and satisfies the sweet tooth.
1/4 tsp baking soda
1/2 cup coconut flour
Pinch of salt
1/2 cup unsweetened, canned coconut milk
1/2 tsp powdered stevia
2 Tbsp. coconut oil
3 eggs (use flax egg for vegan)
1 tsp vanilla
1/2 cup diced fresh strawberries
Preheat oven to 350. Line 8 cups of a 12 cup muffin tin with paper baking cups or brush generously with oil.
In a medium bowl, sift coconut flour, baking soda and salt, whisk to combine. In another medium bowl, add unsweetened coconut milk, stevia, coconut oil, eggs, and vanilla, whisk thoroughly. Pour liquid ingredients into bowl with dry ingredients, stir to combine. Fold diced strawberries into muffin batter.
Spoon muffin batter into the prepared tin, smoothing tops. Put about an inch of water into the four empty muffin spots so the pan doesn't burn. Bake muffins until golden brown, about 30 to 40 minutes.
*SIBO - Small Intestinal Bacterial Overgrowth. When food is not properly digested in the large intestine. Sometimes, starving the body of grains and sugar force the bacteria to die.
* IBS - Irritable Bowel Syndrome. Eliminating sugar and wheat can really help to calm things.
