Banana Oatmeal Breakfast Cookies

Not only is this recipe vegan and gluten-free, it's perfect for anyone following a no sugar or paleo diet. But just because these cookies are healthy, they are sweet and delicious for anyone. Perfect for breakfast especially for teenagers that would rather sleep than eat -- just hand them a couple on their way out the door. Also a nice alternative to granola bars that are often high in sugar.

  • 1 flax egg 1 tablespoon flaxseed meal + 3 tablespoons water

  • 1/2 cup peanut butter or almond butter

  • 2 TBSP of maple syrup

  • 1 large banana mashed

  • 1 vanilla extract

  • 1/2 cup rolled oats

  • 1/2 cup coconut flour

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 1/4 cup dark chocolate chips

  • 1/4 cup chopped walnuts

  • 1/2 cup of applesauce

  • 1 TBSP chia seeds

Instructions:

Preheat oven to 350. Line a baking sheet with parchment paper for easy cleanup.

Whisk together the ground flaxseed and water and set aside.

Beat together peanut butter, syrup, applesauce, smashed banana and vanilla in a large bowl. Add flax egg and mix to combine.

Next, stir in the oats, coconut flour, baking powder, cinnamon and salt. Fold in chocolate chips, walnuts and chia seeds.

Drop rounded tablespoons of dough onto the baking sheet.

Bake cookies on center rack for about 20 minutes or until bottoms are golden brown.

Enjoy once cooled and you can freeze a batch for later. Just defrost and microwave for a few seconds.
