No Bake Healthy Fudge Bites

Not only are they no bake and no sugar, but these fudgey bites are gluten-free. If your sugar and wheat loving friends have any doubts, they won't after they try. Pure Cacao Powder is loaded with antioxidants, iron, magnesium, fiber and copper making it a super food, that paired with dates which also pack tons of fiber and nutrients, is super delicious.

- 1 cup of rolled oats

- 1.5 cups of pitted Medjool dates

- 2 TBSP coconut oil

- 1/4 cup of raw almonds

- 3 TBSP peanut or almond butter

- 1 tsp of vanilla

- 3 TBSP almond milk (or any milk)

- 3 TBSP cacao powder

Combine all of the ingredients in a food processor. and pulse until combined and smooth - should be a fudgy consistency. Next, form the shape you like and place on a cutting board or tray so you can refrigerate until firm, about a half hour. Remove from tray and place in an airtight container (or serve immediately). This recipe make about 18 cookies, and lasts over a week in the refrigerator or freezes well for months.
